Malagueta pepper, a kind of Capsicum frutescens, is a type of chili widely used in Brazil, Portugal, and Mozambique but also used throughout the Caribbean, specially its Spanish speaking countries. It is heavily used in the Bahia state of Brazil. It apparently gets its name from the unrelated melegueta pepper from West Africa (Zingiberaceae).
It is a small, tapered, green pepper that turns red as it matures at about 2 inches in length. It has a range of 60,000 to 100,000 Scoville units. Two sizes are seen in markets, which sometimes have different names: the smaller ones are called malaguetinha in Brazil and piri piri in Portugal and Mozambique, and the larger ones are called malagueta in Brazil and Portugal. They are not different varieties, just peppers of different maturities from the same plant.Grains of Paradise has a full, delightful taste that is a mix of mild black pepper, cardamom, coriander and ginger and it features a luscious citrus aroma.
Long used in Middle Eastern, North and West African cuisines, this spice is starting to gain in popularity throughout other regions of the world. Grown in the swamps of the “pepper coast” of West African the cube-ish, whole seeds are reddish brown and turn to a dull Grey when ground. The two major exporters of Grains of Paradise are in Ghana and Nigeria.
Also known as Grains of Paradise or known as alligator pepper, melegueta pepper (not to be confused with Brazilian Malagueta pepper which is actually a member of the Capsicum family), Guinea pepper, ginny pepper and Roman pepper. A lesser known member of the ginger family (Zingiberaceae ), Grains of Paradise is used by many as a substitute for those who are looking for a flavor similar to black pepper but one that is just not quite as hot. So because of this, Grains of Paradise is often used in larger quantities than pepper when cooking.
Grains of Paradise has a peppery, pungent flavor with bitter fruity notes and a slight aroma that is similar to cardamom and clove. Grains of Paradise is not as pungent as black pepper.
You can also use Grains of Paradise as a substitute for black pepper. In a way this is almost like a finishing salt so add them right before a meal is served (by grinding on top). Grains of Paradise works really well in this manner especially on steamed fish or steamed vegetables. We've also had customers who have used Grains of Paradise in a variety of rice dishes. And of course if you like to make your own home brew then you've probably seen the TV commercials for Sam Adams beer touting this as one of their "secret" ingredients.
If you are going to use it as a substitute for pepper I recommend getting a separate pepper grinder. We always recommend starting off using less than more when experimenting with a new spice or seasoning so that it doesn't overpower your dish. You can always add more next time.
Helpful hint – you will enjoy its fullest flavor if you grind it just before adding to a dish (or just before serving).
The spice is quite common in Moroccan spice blend Ras el Hanout and in Tunisian Five Spice. In this country it is gaining popularity when ground into dipping sauces or rubbed on chicken, steaks and hamburgers before grilling.

On a clear beautiful tropical morning 75 years ago, December 7th 1941, the Japanese Imperial Fleet surprised the U.S. Military in a raid of unprecedented size and for the next 2 hours wave after wave of planes pounded the ships and bases in and around Pearl Harbor.
Japan intended the attack as a preventive action to keep the U.S. Pacific Fleet from interfering with military actions the Empire of Japan planned in Southeast Asia against overseas territories of the United Kingdom, the Netherlands, and the United States. Over the next seven hours there were coordinated Japanese attacks on the U.S.-held Philippines, Guam and Wake Island and on the British Empire in Malaya, Singapore, and Hong Kong.
The attack came as a profound shock to the American people and led directly to the American entry into World War II in both the Pacific and European theaters. The following day, December 8, the United States declared war on Japan. Domestic support for non-interventionism, which had been fading since the Fall of France in 1940, disappeared. Clandestine support of the United Kingdom (e.g., the Neutrality Patrol) was replaced by active alliance. Subsequent operations by the U.S. prompted Nazi Germany and Fascist Italy to declare war on the U.S. on December 11, which was reciprocated by the U.S. the same day.
The attack commenced at 7:48 a.m. Hawaiian Time. The base was attacked by 353 Imperial Japanese fighter planes, bombers, and torpedo planes in two waves, launched from six aircraft carriers. All eight U.S. Navy battleships were damaged, with four sunk. All but the USS Arizona (BB-39) were later raised, and six were returned to service and went on to fight in the war. The Japanese also sank or damaged three cruisers, three destroyers, an anti-aircraft training ship, and one minelayer. 188 U.S. aircraft were destroyed; 2,403 Americans were killed and 1,178 others were wounded. Important base installations such as the power station, shipyard, maintenance, and fuel and torpedo storage facilities, as well as the submarine piers and headquarters building (also home of the intelligence section) were not attacked. Japanese losses were light: 29 aircraft and five midget submarines lost, and 64 servicemen killed. One Japanese sailor, Kazuo Sakamaki, was captured.
Remembering this day is very meaningful to the state of Arizona.

The Geiranger Fjord is a fjord in the Sunnmøre region of Møre og Romsdal county, Norway. It is located entirely in the Stranda Municipality. It is a 9.3 miles -long branch off the Sunnylvsfjorden, which is a branch off the Storfjorden (Great Fjord). The small village of Geiranger is located at the end of the fjord where the Geirangelva river empties into it.
The fjord is one of Norway's most visited tourist sites. In 2005, it was listed as a UNESCO World Heritage Site, jointly with the Nærøyfjorden, although this status is now threatened by the disputed plans to build power lines across the fjord.
A car ferry, which doubles as a sightseeing trip, is operated by Fjord1 Nordvestlandske. It runs lengthwise along the fjord between the small towns of Geiranger and Hellesylt.
Along the fjord's sides there lie a number of now-abandoned farms. Some restoration has been made by the Storfjordens venner association. The most commonly visited among these are Skageflå, Knivsflå, and Blomberg. Skageflå may also be reached on foot from Geiranger, while the others require a boat excursion. The fjord is also host to several impressive waterfalls such as Seven Sisters Falls.
This fjord is surrounded by some of the steepest mountains on the entire west coast. It is very narrow and has no habitable shore area, for the precipitous heights rise in sheer and rugged strata almost straight out of the water. Foaming waterfalls plunge into the fjord from jagged peaks. There are, however, a few mountain farms here, and of these one or two have such hazardous access, by paths that wind around steep precipices, and by bridges that are fixed to the mountain with iron bolts and rings, that they bear witness in a most striking way to the remarkable powers of invention which the challenges of nature have developed in man.
The two most notable waterfalls in the Geiranger Fjord are Seven Sisters Falls and the Suitor (also called The Friar). Both falls face one another across the fjord, and the Suitor is said to be trying to woo the sisters opposite.
The Bridal Veil is another waterfall in the fjord, so named because it falls delicately over one rocky edge, and when seen backlit by the sun it has the appearance of a thin veil over the rocks.
The Geiranger Fjord is under constant threat from the mountain Åkerneset which is about to erode into the fjord. A collapse would produce a tsunami, hitting several nearby towns including Geiranger and Hellesylt in about ten minutes.

When speaking with a commercial property owner or manager about doing the maintenance for their property a common question is if we can give them references. While you may believe that is a good idea you might want to think that process through.
It reminds us about the old say of having the “Fox watch the chicken coup.” Probably not a good idea.
Asking any contractor to give you their references leads to this question. Will he give you a list of customers and former customers to call? Would he give you the contact information from an unhappy former customer? That doesn’t seem very likely.
In this day and age of computer and internet communications you would think that a quick check of one of the many “reference sites” would give you a good idea of who to hire. Two things you may want to consider, is the normal human condition, that people will post a complaint long before they will post a complement. Some vendors actual hire or reward people to leave “good or great” ratings. In some cases people have been hired to post negative reports without ever using the contractor. While the reference sites try to avoid having this occur there is no truly effective way to stop it from happening.
There are websites that openly sell their services to “repair” a companies’ online reputation.
One of the best ways to find out an overall view of any contractor is to speak with other property managers and owners and ask if they can give you someone that they have used and are or were happy with.
Do your homework and ask around to find the real story about your next contractor. Some old fashion leg work will give you a much better idea of who to hire. Asking the contractor or using reference sites are not likely to give you the true and full picture.

Four Quick Tips
Your greenscape needs a little extra attention this fall and will have an advantage over lawns that are left to fend for themselves until spring. Because turfgrass is about 75% water, when the plant loses more water through the leaves than it absorbs through the roots, winter drought stress sets in.
Your grass will eventually stop growing and enters a dormant state. While the plant may not be dead, taking appropriate action in the fall can help the turf recover during the winter and come back rejuvenated next spring.
Here at Greens Keeper Landscape Maintenance we recommend these steps to nurse drought-stricken turf areas back to health:
1. Mow Higher
Though fall rains can spur vigorous blade growth, resisting the urge to mow can be beneficial. Drought stress is not eliminated after one or two waterings or rain showers, so give the turf some additional time to encourage root growth and depth before mowing. Apply the “1/3 Rule” – remove the top third of the blade height – when mowing to avoid additional stress.
2. Remove the Thatch Layer
Thatch build up can prevent water and nutrients from absorbing into the soil where the plant roots need it most. Use a thatch remover, for mowers, to lift the thatch from the turf. Collect the thatch removed and use it as compost.
3. Aerate
Aeration is key to any healthy lawn. You should aerate twice a year, in the fall and spring, and especially after drought stress. Aerating relieves soil compaction, encourages root growth, improves water absorption and prepares the soil for overseeding and fertilizing.
4. Overseed and Fertilize
Overseed to fill in thin or bare areas, and apply a starter fertilizer with higher levels of phosphorus to establish the new root system. If your greenscape does not require overseeding, simply apply a fertilizer with higher levels of nitrogen, which will encourage growth and recovery.
